Staub La Cocotte de Gohan Black Pot (12cm)
This cast iron pot for cooking rice was developed by Staub, beloved by chefs around the world. It is designed to produce deliciously fluffy Japanese rice, and can also be used as a waterless cooker. During the period between heating and boiling, moisture soaks into the core of the rice, and even heating of each grain of rice facilitates the gelatinization of the rice for a perfectly fluffy texture. The rounded, curved shape of the bottom creates a large convection current from the bottom of the pot, heating the rice evenly throughout the pot. Also, the high heat storage capacity of this pot allows fine convection currents to be maintained during boiling without the need for fine adjustment of the heat level, ensuring that heat is evenly distributed to each grain of rice. Size S (12cm) cannot be used with IH induction cookers due to its small bottom diameter of 8.5cm.
