●What is a pressure cooker? ... Steam builds up inside the pot, and the pressure is maintained by releasing the steam through the weight or steam outlet, allowing for high-temperature, high-pressure cooking in a short amount of time.
●Pressure Cooker Terminology
○What is pressure cooker time? ... The time from when steam starts to come out of the steam vent on the pressure cooker to when you turn off the heat.
Once steam begins to come out of the pressure cooker, reduce the heat to very low. (Reducing the heat may stop steam from coming out of the pressure cooker.) If the pressure inside the pot is appropriate, no steam will come out of the steam vent, but cooking will continue.
○What is rapid cooling? ...This is a method to quickly release the pressure inside the pot.
Use this to prevent overcooking or boiling, when you need to open the lid quickly during or after cooking, or if the handle feels heavy when sliding the lid.
○What is natural cooling (steaming time)? ...After turning off the heat, leave the pot as it is until the pressure has released.
When you turn off the heat, the pressure gradually decreases, and once the lock pin has lowered, the pressure inside the pot will be equal to the outside air pressure. Cooking is still occurring during this time. Natural cooling is an important time, just like when the pot is being heated.
○What is the maximum cooking amount? ...Do not fill the pot more than two-thirds full. In particular, with foods such as beans, whose volume increases during cooking, do not fill the pot more than one-third full.
